Sarah, just saw your post......been busy with my daddy lately.......people in Colorado are upset because it is so crowded. The cities didn't plan on the growth and you cannot crowd that many people together without their being some problems. I moved back to Oklahoma, where I am originally from, but moved to Kansas, Ok....or better known as Little Kansas....I hate giving my address out, people always think I am giving my state before my city.

I have been staying in OKC with my Dad for the last few weeks and I really miss my home in the woods........

Is dad doing ok?

Today's another day. I'm going to try to eat well. I have to stop off at the store to get something for a covered dish tomorrow. I should have planned better and could have made something healthy like pasta salad, but know I'll be too lazy after my 12-hour shift tonight. :)

Daddy is fine.....just having catarac surgery yesterday and next wednesday.......I am just very nervous when anything is wrong with him...he is in his 70's with heart disease that nothing can be done about......so I worry.

As far as the house goes, if you tiptoe quietly my husband probably would never know you are there.......lol

Hi guys!

Haven't done especially bad lately, nor especially good. My will power is non-existant when I get home lately, too pooped to cook or put anything together. I do okay during the day, avoid sweets, etc., but just am feeling pretty bedraggled. Last night we ordered pizza. I'm hoping to do a little better today, head for Curves later and see if that helps. Hope all is well with y'all!

FINALLY! A day on track from beginning to end! Ate well all day, and went to Curves after work. Big salad with lotsa different veggies and a can of tuna on top with some very tasty Bernstein's Italian dressing.

One of my co-workers is starting our own version of 'The Biggest Loser'. Anyone who wants in puts $20 in the pot. Contest runs from 4/1 - 4/30. You say how much you want to lose in that time period. The person who loses the highest % of their total goal to lose wins the pot. It just occured to me I should have made my goal something like 2 lbs. instead of 10 to ensure winning! We may need to make it a 10# minimum. I put in my $20 then realized I will be in Vegas for 10 days in the middle of this. Will need to plan on hitting the gym at the hotel every day, and walking my little feet off (not hard to do there) so as to offset my current eating plan there! NOT planning on the buffet binge or desserts (though I may have 1 or 2 treats). More along the lines of getting to eat things we can't get here. Like Thai food or really good Chinese. And fish tacos!!!! (Don't make that eeeewwwwww noise if you have never tried them. They are not made the same as regular tacos.)

Baja Style Fish Tacos

INGREDIENTS

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 (1.25 ounce) package ORTEGA® Taco Seasoning Mix, divided
  • 1 pound cod or other white fish fillets, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 1 package (12) ORTEGA® Taco Shells, warmed
  • Toppings: shredded cabbage, chopped tomato, lime juice

DIRECTIONS

  1. COMBINE sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.
  2. COMBINE cod, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.
  3. FILL taco shells with fish mixture. Top with cabbage, tomato and sour cream mixture and lime juice.

These are very popular in Southern Ca. and Baja, Mexico. mmmmmmmmmm!

And your recipe sounds delicious. I'm going to put that on the menu. The only fish tacos I've seen (remember I don't get out much, LOL) are the ones with fish sticks instead of the beef mixture and somehow those don't sound too appealing :eek: But I haven't actually tried them, so I probably shouldn't judge ;)

Well, I was gonna comment on everybody's post - but it's so late, so I will just say HULLO! I am having some healthy meals - helps when I eat with somebody else, hmmm...

Also looking at ROLLER BLADES -- I have been wanting to get some for years - does anyone else here do it? and is it uncool to use ski poles? (ha ha)

You guys are all AWARE - that seems so important - because you ARE making healthy choices, and they DO add up!

But - fish tacos???? I am skeptical LOLOL

Tweety - looks like Blue took care of the slapping - yeay! I will spare you a second whack if you promise to "snap out of it" LOL! Seriously though, I hope you are feeling better. It is really hard to get out of the blues once you get into a slump. I feel like I am headed in that direction and I'm trying desperately to stay afloat! I promise to throw you a rope, but you have to do the same for me here in about a week because I think I'm sinking. ;)

Etravel, that is rather confusing with the state and the city, but now it makes total sense. Glad your Dad is doing well!

Blue, sounds like you are getting on track rather well there with curves and the salad - WooHoo!!!

Hiker, fish tacos just sound horrible to me, but I am not a fish person, so you are brave to even contemplate tryinig - LOL!

And me, I seem to be in a constant state of anxiety since I started spring break. I can't snap out of it, it's horrible! I can't sleep, I can barely eat (which is good for my weight, but it's getting old because I keep getting light-headed and I know it's not healthy - I keep forcing myself to eat something every once in a while just so I don't make myself ill), and I seem to be sticking my foot in my mouth constantly. I might as well walk around with it there - it's horrible! I thought I would really enjoy a break, but I can't wait to get back to class next week and get my life back on track. Yikes!

Anyway, if I missed anybody, sorry and Hi!

Thank you Sarah, my Daddy is doing great, except he won't learn to use the eye drops, so, I get to get up in the middle of my sleep to do his noon ones, but I love him enough to do that.

I understand what you mean, I hate getting out of my rut. I function better when I have a schedule that I am used to. Unfortunately, it never effects my eatting...lol Take care of yourself, spring break is almost over.

Blue.....not sure about that fish taco, but think I will try it, just spring it on my family. We did the biggest loser at work, cost $20 and ran for 3 months, and the person who lost the most, but had to be at least 2# week loss, got the money........none of us ever did that. Think it was too long, we started out great, but didn't stick with it. I think a month at a time would be better. Good luck on that

Zoe.....let me know how you do with the rollerblades. I have never liked the look of em. In fact, I don't like anything to come between my feet and the ground.
