Recipes and snack ideas for school and clinicals

  1. 2 Hey everybody! I'm starting LVN school on Friday and I thought it would be a good idea if we got a thread (is that what this thing is called?) going for snack and food ideas. I know it would help me and maybe a few others! So post your go to grab and run snacks for school and clincals and those easy peesy dinner ideas! Thanks!

    So I'll start. I love love love my crock pot for easy dinners! Throw some boneless, skinless chicken breast in with some fresh onion and a couple cans of cream of mushroom soup, set it and forget it and boo yah! A nice dinner without having to stand over the stove for hours! I normally make a pot of rice a day before or whenever I have some "free time" and spoon the meat and sauce over it. Nice, delicious and easy too! Normally takes about 6 hours so I can go to school or work and come home to an already prepared meal. Yippee!

    -Cut up veggies at the beginning of the week, Take them and your favorite dip in a lunchbox with a cooler.
    -Cup of yogurt.
    -Leftovers already packaged into individual portions. Make one or two dishes on the weekends and use the individual servings all week.
    -Those 100 calorie snack bags/popcorn bags.
    -Always with the granola bars.
    -PB and J, tuna fish, etc. Do a different one every week so you can change to a new one when you start getting sick of the current one.

    See, I have the ideas, the issue is actually purchasing and making the stuff every weekend

    I'm moving out to live on my own once I start my bsn program in August. I'm so worried because I can not cook at all! I'm open to fast and easy recipes so i won't starve!

    For some reason AN won't let me like this, but I like it! I like to do chicken breast with cream of chicken soup, some cheese, and salsa con queso to make a zesty kind of Mexican inspired dish to serve over egg noodles. There a billion awesome recipes out there that are just as easy. Just google them, or check out allrecipes.com in the slow cooker section.

    Man tell me about it! I try to buy in small quantities so we don't waste as much food but then I end up having to go to the store twice as much! >_<

    Love this!! Very healthy too! I definitely don't want to pass out in NS from starvation or low blood sugar.

    Try crock pot (aka slow cooker) recipes. You just throw everything in and it cooks so slow you can't burn it and everything comes out wonderfully tender! Just make sure you season your meat first or it can be a little bland.

    I don't eat meat or dairy, but I'm a candy fiend! (crazy, I know)... I also have T1 diabetes, so I need to make sure to keep snacks on me at all times just in case I go low. I usually carry a Larabar on me or maybe a peanut butter Clif bar. If my BG is dropping, I keep little 100cal bags of jellybeans and Airheads in my bag in the locker room. Generally, the bars are pretty good for meal replacements if I have to skip lunch for whatever reason. For dinner, I stock up on Amy's frozen dinners - my favorite is the brown rice and black eyed peas ones, or I'll microwave a veggie burrito, and then of course there's the ol salad option (I love steamed kale). I tend to graze and pick, so I always keep tons of fruit and cut up veggies in the fridge. I'll throw washed berries in a ziploc so I can just grab one and go... I usually have a big bowl of fruit salad made and eat from that during the week, and as far as veggies, anything goes... not just baby carrots and celery sticks! I slice up bell pepper, throw some cherry tomatoes in a ziploc, string beans are awesome, so are snow peas and sliced zucchini or cucumber. Another thing I make sure to keep in my bag are those little 5 hour energys! Lastly, I've found those little portable Jef peanut butter cups to be really useful - great to bring with a ziploc of sliced apple. Peanut butter is my go to for protein and fat - helps keep me satisfied for a longer period.

    I love, love, love this thread! I unfortunately have gained quite a bit of weight since starting school. It's all because of my eating habits, I choose convenient foods, which obviously are usually unhealthy. I'm working to take some of the weight I've put on, off. I'm so worried I'm going to put it all back on once I start nursing school. I love the suggestions.

    I like to make a pot of brown rice and sometimes a pot of beans on the weekend. Then I'll eat rice and beans with added stuff for lunch, like green olives, veggies, left over chicken. Whatever's handy. I also make a bean salad concoction with kidney beans, olive oil and vinegar and whatever seasonings. Onion and garlic. I like that plain, with added tuna or over salad. I also to cut up veggies for the week and make my version of hummus (I'm allergic to sesame so I don't make it authentic). I take a can of garbonzo beans, rinsed and drained, add garlic, salt, pepper, a chipotle pepper and olive oil. It's DELISH!

    Easy Peesy Meals- serves 4

    *Pork Chops- place 4 chops in crockpot, in separate bowl mix 1 can cream-chicken soup and 1 can cream mushroom soup, pour over chops and set on low for 6 to 8 hours.

    (Serve with homemade mashed potatoes and pour the left over soup on top of potatoes as gravy.) ****SUPER TENDER and GREAT for LEFT-OVERS

    *Chicken Parmesan Spaghetti- serves about 4

    -Noodles: Boil bag of spaghetti noodles…follow bag’s instructions

    As the noodles boil, prepare cheese sauce….

    -Cheese Sauce: In a small sauce pan add 1 tbs of butter and let melt, add 1 package of cream cheese (cubed), add cup of shredded parmesan cheese, add “about” 1/2 cup of milk, stir all ingredients over low, add a pinch of garlic powder and parsley leaves

    as the cheese sauce is warming, stir fry meat and veggies….

    -Chicken and 2 red bell peppers: stir fry small chicken pieces over medium with cut red bell pepper with 1 tbs butter.

    -Mix noodles, cheese sauce, chicken/bell peppers together and serve *If cheese is too thick just add more milk and let it heat up

    (Sometimes I add mushrooms and squash)

    * Meatloaf- use Kroger’s meatloaf mix and recipe on the back(It tastes the best!!!)Serve with green beans and mashed potatoes.

    *Chicken Pie- serves about 5
    option 1:
    Use a rotisserie chicken and shred 3 cups of meat and place to the side.
    Boil 1 can (or 2 if you want it extra juicy) of chicken broth and 1 can of cream of chicken soup over stove.
    In another bowl...mix 1 cup SELF rising flour, 1/2 melted butter, sprinkle pepper, 1 cup buttermilk (1tbs vinegar + 1 cup whole milk (stir and sit for 5 minutes)= buttermilk) and set aside
    In a 2 qt casserole dish add chicken, half a bag of frozen peas, half a bag of fresh cut or frozen carrots. Pour boiling broth/soup over chicken. Pour flour mixture over the top and do NOT STIR it. Try to pour it so the entire top is covered.
    Place in the oven for 40 to 45 minutes at 425 F.
    option 2:
    Use a crock pot to cook boneless chicken breast...enough for 3 cups.

    I serve with fresh salad and fresh fruit (like watermelon) YUMMY!

    Oh now, cooking is like anything else... if you read the directions, and practice, you'll figure it out!! And you might even have a good time doing it too!! You might want to start with some crock-pot/slow-cooker recipes like some others here have suggested as those are often easy and forgiving and are a rewarding way to start learning about flavors and combinations!

    This thread is a great idea btw but I'm afraid I may not benefit from it much as I don't eat many of these things... Any other Paleo eaters out there??!?
    My biggest challenge by FAR will be trying to adhere to Paleo while having such a limited amount of time, especially in an accelerated program!! The entire principal of the Paleo lifestyle (it's not a "diet"...) is the pure opposite of the high-convenience SAD (Standard American Diet), which means I will have to do an astronomical amount of planning to even have a shot in the dark at staying on track!! I think I'm going to start doubling most of my recipes going into the summer, and try to save a freezer-full of prepared meals. Snacks are going to be the tough one...
