Where to take prereqs in AZ? (Nutrition and Psychology)

I have 2 prerequisites to complete (Nutrition and Developmental Psychology) for entrance into my nursing program. I was hoping to take these classes online because of time constraints in my personal schedule, but online classes can sometimes be harder than those in person. I'm located in Arizona (Phoenix area). Can anyone recommend a college or university that provides the online format? Can anyone share what their experience(s) have been in taking these courses online?

Rio Salado is part of the MCCCD community colleges. It is completely online and offers both of those classes. I took psych online through CGCC so I know they offer it as well. The online psych was easy and I got an A. It had 2 pro tired exams at th school and the rest online. I took nutrition and RIO and do t remember if it had orictored exams but I know it was a lot of short essay answer type home works and some actual ales says with some online quizzes. It wasn't too bad and pretty easy to self teach by reading the book.

Second Rio Salado. I took some courses there a few years back and it was pretty straightforward.
