If you're already at the point of applying, it's too late to try to add anything really meaningful to your application. It would just come across as a quick fix to impress the admissions committee. Have you contacted the program to see what criteria they use to evaluate applicants? Maybe they're only interested in your GPA & GRE Scores. I hope you are looking at programs that include a practicum or residency - otherwise, even with that MSN, it would be challenging to get an education job with no exposure/experience in the role.
If you're serious about a career change to nursing education, I suggest that you begin by becoming a BLS &/or PALS (since your're in Pedi) instructor. Volunteer to develop & deliver inservices for your department. Become a preceptor. Help with skills check-off days. Most educators begin their careers in these types of activities, before moving into more education-centric roles. If nothing else, it will help you determine whether you actually like education or not.

I am considering applying for several MSN Education programs. I have a background in pediatrics but aside from that not really anything specific to education. Does anyone have suggestions for things I could do to bolster my application to make me more appealing? Volunteering, certifications or other activities?
