I started scrolling down to find the rest of the letter and then I realized how far you had really gotten. Sorry, it made me laugh!
It is very stressful. I was writing up my resume (easier than a cover letter, ino) and it still took me several weeks. I don't have any advice, but good luck!
Wait, I do have a link! https://allnurses.com/nursing-career-advice/wondering-why-you-84387.html It has helpful tips on resumes, cover letters, interviews, etc.

Does your school have any workshops to help you? I know at my program, we're required to keep all of our info and skills that we've performed for a portfolio. We meet with our advisor 3 times throughout our 18 months and she helps us slowly update our info so that when we graduate we have our portfolio done and ready. They also offer workshops that help us update our resumes and stuff.

The best thing I did was buy a book about writing resumes and cover letters.
