She has me on for an eight day stretch with ONE day off, then back on, then a seven day stretch with ONE day off....
I'm regularly scheduled part-time. There's a woman retiring and her job is open until she actually gives them a date. I can't do all of her days plus mine!
How do I handle this? I'm walking wounded.

Tell your nurse manage that it just isn't possible for you to do. If that doesn't work, go to HR.

Are these 8 or 12 hour shifts? How many hours are considered part-time at your hospital? Need more info.
Eight hours. 40 hours per two weeks are part time.
How many hours in a 2 week period are you being scheduled for?

I would say no. We sometimes have to talk to the NM about our schedules becasue we are either short or over on hours for the week. But I would flat out say no. I wouldn't think they would want you to do that anyway, wouldn't it be a lot of overtime?
I do pick up some per diem days. I never anticipated picking up every per diem day the facility has. I get the per diem - higher - rate for those days and some overtime.
I don't care. I don't want that many days. Oy!

Yes, just tell them what days you are available and work no more than your required commitment unless you want to. I don't think it's even legal (OSHA, state labor laws) to schedule you like you have described.
What a wonderful DON I have! She just took two days away, giving me 4 and 4, and 4 and 3 instead of 8 and 7!
I'll survive the month.
