So after I take my boards (LPN) next month I plan to enroll immediately in Excelsior.

I already have my associates in Business Management.

How long will the program take from there? What can I expect? How long do the average classes take to complete?

You can get a feel for how people do in the program by going back and reading many of the numerous threads on Excelsior. As far as how long it takes, that is up to you. Some people have been able to complete the entire program in as little as nine months. That is not usually possible now because the waiting time to take the CPNE is on average from 7 to 9 months alone. Some people take a test every two or every three weeks. You can complete the program in about a year to a year and a half if you stay focused and push yourself. Whatever you do, don't set it aside and procrastinate. You have a total of seven years to finish or you will be dismissed. Good luck.
