I'm a new grad here hoping to get hired in a NICU position but of course I'm down for any field, but there's been a few NICU job openings at a hospital here in NYC where they are looking for new grads so just wanted to get an opinion on my cover letter, because I hope it will make me stand out. I have had the chance to work along side doctors, nurses and other healthcare professionals during my extensive clinical hours at Beth Israel Medical Center in New York City.
I am a very fast learner, a good team player, detail oriented and I would be a great addition to your staff. I am very experienced in working with patients in all types of setting and providing compassionate and effective care. I strongly believe that this position would be a great opportunity for me to enhance my knowledge and skill level in the healthcare profession and I am extremely passionate for this potential opportunity.
During my nursing school rotations, I had the wonderful opportunity to work 12hr shifts in the NICU for 3 weeks. Here is where I really grew to understand and appreciate the amazing work of the NICU nurses, the gentle yet high quality care the infants needed and the compassionate bond between infants, their loved ones and the medical team. I strongly believe that I have the quick learning abilities to understand all NICU equipment and the special individualized care that is needed to get these babies to optimal functioning.

I think it's a bit lengthy. I'd condense it down. You want to hit only the highlights. Remember how many applicants they have to go through. You want to get your point across, not lost in a sea of words.
