HELP! Who do do I have recommendation letters addressed to?

Hello everyone I have a question, I have an interview friday and the nurse recruiter said to bring any recommendation letters I may have. I am attempting to bring 2 of them both from previous professors I have had. One of my professor gladly said yes but she wants to know who to address it to?? The thing is the secretary told me I will be meeting with one person first, and gave me her first name only, but then I will be meeting with 7 people. So should she address is to the first person I will be meeting with (leaving out the 7 others)?? OR should she just write "To Whom It May Concern" or nursing recruiter?? I am not sure what to tell her please help!
