Firstly, I'm not a nurse (yet), but I'm considering a career change from what I currently do to a CRNA. I understand I'd have to go the route of RN and then critical care experience before applying to CRNA school. The issue is I can't find any hospitals local to me that will allow shadowing to see what a career is like and it's very frustrating. I live in the Boston area and keep getting turned down due to patient confidentiality concerns, or so they tell me. I'm a male in my 30s, so I'm looking to make a decision about whether to pursue this path or not as soon as I can. Does anyone know of any CRNA shadowing that can be done in Boston or as far west as central Mass?

Contact a CRNA program and see if they can help you.

Boston College and Northeastern are CRNA programs in Boston. I agree with @loveanesthesia about reaching out to one of the programs and seeing if you could shadow a CRNA that is connected to the program, maybe a graduate that they could put you into contact with to shadow.
