Why gastric acid is produced more between 10pm to 2am?

I thought gastric acid was only produced when we eat food. From what source are you getting that it is produced more between 10pm and 2am?

I don't think it's secretion is governed by time in any way. There are really 3 things that determine gastric acid secretion:

1. Thought, smell or taste of food.

2. Distention of stomach when food enters the stomach.

3. When the food enters the small intestine (but this counts for very little of the total acid % secreted)

Histamine, gastrin, acetylcholine and somatostatin are the major hormones at work... but not all of them obviously.

So yeah... time... don't think it really has much to do with this...

Because most people are asleep during this time and the parasympathetic system will be most active while asleep. That is the only thing I can think of.
