Calorie Counting

Is there a down-out simple book/web site on calorie counting? I was very poor in nutrition, and since we get many diabetics coming to our clinic, I wish to start teaching more about calorie counting. At this time, I give them meal planning with the plate method, and we do refer them to a dietitican. However, due to the volume, and the lack of a full time dietitican, patients are receiving appointments beginning in June, 2008. Even the most seasoned nurses I know at my job are having problems teaching nutrition. Any assistance would be greatly appreciated (as usual).

I count calories when I am actively dieting. I limit myself to ~1300 per day. I am very strict with it and count every bite that goes into my mouth. It's hard for the 1st week, but gets much easier as I get used to being on a diet and my cravings subside. It also gets easier as you start to become more conscious of the caloric value of common foods, and start thinking "do I really want to use 300 of my calories on that spoonful of peanut butter...or would I like to spend them on a salad with balsamic dressing, some chopped veggies and a grilled chicken breast with some spicy glaze?"

Sometimes the answer is Yes..I would like peanut butter! But then I have to live with that choice for the rest of the day...which means that my supper might have be pretty darn small!

It gives me more control and gives me a very set schedule (ie...if I eat 3,000 calories less than my recommended amount this week, I will lose 1 pound...) that lets me know exactly how much weight I will be losing in what amount of time. Plus I find that it makes me more conscious of the foods I'm eating when I'm not "on a diet."

I started off about 30 lbs overweight. I lost 10 lbs in about 2 months, maintained for about 6 months, lost 10 more lbs over 3 months, am currently maintaining until spring, and then will try to lose the final 10. I find that the gradual loss is easier to maintain...and I don't always feel like I am on a diet, either.
