It seems like practically every nursing school is based on a point system (i.e. 50 points for grades, 40 points for TEAS). Where do factors like volunteer experiences and essays tie into admissions?

It seems like the majority of the Accelerated BSN programs go by a point system, which doesn't work for my advantage. It'd be nice to include essays and extracurricular activities too.

Different schools use different criteria for admissions --- there are no national standards.
I am the Assistant Dean for Admissions & Financial Aid. My School of Nursing admits students at three potential levels to prepare to be a RN. These are:
Directly from High School: We consider academic background, SATs, three essays, two recommendations, and extracurricular experiences.
Transfer students: All of the above, plus the college transcript.
Direct Entry MSN: Academic background and achievements, two essays, three recommendations, resume/CV, work experience, and grades in the prerequisite classes. Applicants with lower undergraduate GPAs are required to submit GRE scores.
We do not require the TEAS or NET for any program, nor do we have a point system for admissions. The admissions committees read and evaluate all of the applications each year before making admissions decisions.
