serum has no clotting factors in it ...hence the clot at the bottom of the tube leaving a straw colored liquid on top. Plasma has the clotting factors in it and the blood does not clot in the tube.

Serum is like plasma except fibrinogen & other clotting factors are no longer present...hope that helps!
