The Air Force doesn't use MOS. The specialty ratings are called Air Force Specialty Codes (AFSCs). The AFSC for a flight nurse is 46N3F for an entry-level, fully qualified and deployable, flight nurse. The number varies slightly depending on whether you are board-certified, in training, etc. It will always be in the 46N-F series though.
Keep in mind that flight nursing in the Air Force is not equivalent to civilian air evac. In my mind, CCATT (critical care air transport team) is much closer. Research CCATT vs. flight nursing to determine which is the best fit for you.
