Canada doesn't separate out "adult nursing". The program covers it all - medicine, surgery, obstetrics, pediatrics and psychiatry. When you embark on a nursing education in Canada you have to take the whole package. And in order to be eligible for registration in Canada, even if educated elsewhere, your education must include all those areas.
As for scholarships, they're not exactly plentiful. They're typically tied to a particular school, agency or group. They all have stringent criteria. In order to find out what's available you first have to decide where you want to go to school. There are a lot of factors to consider when making that choice, such as tuition fees, waiting lists, availability of housing, cost of living, climate and a host of others. Then you look at the school's financial assistance page. Let's use the University of Manitoba for an example. The financial assistance page is here: http://umanitoba.ca/student/fin_awards/. Go to Awards and Scholarships from the list on the left side of the page. Then on to External Awards and Scholarships and then so on.
If you're looking for what's known as a "full ride" you're not likely to find it.
