Nursing Faculty in California

I am a nurse educator with 7 years experience, teaching at the Bachelors degree initial licensure level. We plan to move to California, but state requirements include having worked full-time for at least 2 years in the past 5 years. I am wondering how do full-time educators in California get around this requirement. 

It is more difficult to work at the community college level, as it also requires state certification and the salary is appalling. It comes down to a few hundred dollars per semester per course.

I would hate to give up teaching but the outlook is pretty depressing. Does anyone have input as to how nurse educators survive or change jobs in that environment?
