Perhaps make an appointment with the professors you plan to ask letters of recommendation from. This way they know what to expect in a year or so. I would explain to them your educational plans. When you do apply, give them information about your current status, your CV/resume and any other information you want them to include in the letter. Also, give them at least a month to write the letter.
I don't think a one year absence will be bad. I was out of undergrad for 2 years or so when I asked my old advisor for letters for graduate school.

I need some advice as to how to go about asking for letters of recommendation. I am a senior at a 4-year university majoring in Sociology. Next year I will be attending a community college for a year to finish up my nursing pre-reqs and then applying for a masters entry program in California. My dilemma is that most of the masters entry programs ask for letters of recommendations to be submitted digitally. Because I will be asking my current professors for a recommendation, I do not want to wait until next year to ask them to fill out the form because I want to be fresh in their minds. Did anyone else come across this issue? How do I ask for letters of recommendation now to use in a year or so from now? Thank you so much!!
