So, I have applied to a few of my top choice hospitals, but on a variety of different floors as well as a pediatrics hospital. For the interview do you think it is okay for me to say I really have no idea what area I want to work in, or even with what age group? I had a lot of fun at the peds hospital, but I think I have the most to learn in this area. Is that a plus or minus to mention during an interview? Can I just be honest like this or do I need to act like whatever unit position I am applying for is what I know I want and have wanted? And for the peds positions... do I need to act like peds is what I have always wanted? I really am not being drawn to any certain areas, I only know I do not want to work in a burn center. Anything else sounds just fine to me, any age, any acuity level, as long as I am properly trained and feel I am working at a safe hospital. Any tips for me when interviewing since I am so undecided?

Honesty is always the best approach. However, being *too* honest might hurt you in this situation. Remember that the person interviewing you has a responsibility for staffing his or her units during this current nursing shortage. In addition, they will be investing some not insignificant resources into you upon hiring. If they get the feeling that you are just dipping your toes in to test the water, they may choose a different candidate to better ensure filling the position over the long term.
Keep in mind that nursing is a rare career in which changing areas of practice eventually leads to you being viewed as "broadly experienced" rather than a "job hopper." As long as you invest yourself fully in whatever area you end up in, you can change areas after just a couple years without it reflecting adversely on you.
You will often find that people are willing to invest time and resources into someone with more excitement than experience, but they have to feel that you are genuinely interested in the position. There's nothing wrong with being unsure of where to start, especially at this point in your career. Be sure however, that in all your interactions, you exude confidence even if you don't feel it. That goes for IV starts *and* interviewing.
