I plan on taking A&P1 and possibly intro to stats and a nutrition class all in one semester. Is that overload or fair? And would studying about 30min-1hr daily for A&P1 be good enough to get good grades? And what about for A&P2?

I do not think that is overload at all. If you cannot handle those classes in one semester how will you be able to handle nursing school?
Now, some people can get an A in A&P studying 1 hour a week and some people have to study 2 hours everyday. It's different for every person. But the amount of time you study is almost irrelevant; it's the QUALITY of your studies that count.
I have breezed through A&P I and A&P II with an A. How? I'll let you in on a little secret. Professor Fink. He is a community college professor who posts his lectures to YouTube. He has an entire playlist on anatomy, an entire playlist on physiology, and an entire playlist on biology.
Your teacher is about to teach and go over the skeletal system? Watch Professor Fink's skeletal system videos in his anatomy lecture playlist and his anatomy lab playlist before your own teacher starts their own lecture. Do this for every topic in your A&P classes. This will get you way ahead by familiarizing yourself with a lot of the terminology before your teacher lectures on it. Watching his videos was the main way I studied for my own exams.

Study time is very personal, but in general, I found the adage about 3 hours per credit hour per week to be very helpful. I took A&P 2 which nutrition. Nutrition is pretty easy, but A&P has difficult concepts and a lot of memorizing. I wanted an A in each class, though, and I had the things to devote to it, so I studied a lot. Spend the time on things that are worth it to you. For every student spending an hour a day, there's a student like me spending three hours a day.
