Usually it depends on the different classes taken. The biggest difference would probably be the number, and type, of science classes taken. For example, I already have my AS in Biology, and I took A&P I&II and Lab, Human Biology and Lab, Zoology and Lab, Generaly Chemistry I&II and Lab, and Organic Chemistry I and Lab; but I also had to take College Alegbra and a further math course, I took Elementary Calculus. However, if I had intended on nursing all along (my school has AAS in Nursing), I wouldn't have had to have the chemistries or the further math class.
Really, it depends on the school. The biggest difference, I believe, is in the amount and type of prereqs. The important thing about a nursing program is the actual nursing classes, and that shouldn't be any different for AS in Nursing or AAS in Nursing.
