I am trying to get the professors that I am going to try to get letters of recommendation from, I was planning on getting one from my Biology Professor, Statistics professor and French professor. Is the French Professor not a good idea or would they prefer professors that teach Maths and Sciences?

I don't think it really matters. Just go with the professor that knows you well and can write the best about your talents/abilities.

But if you must decide, probably go with the science/math since that is what nursing is about and nursing schools want to know if you can handle those subjects well.

At the program I got into they probably would have been happy to receive a letter from a French professor provided they could talk about your abilities. They look for people who are well rounded. The biology teacher and stats professor can provide enough insight about your math & science abilities. I would pick who you interacted with the most and could write a detailed letter.
