How does one usually go about shadowing?
I'm about to file my app for RN school and decided it might not be a bad idea to go shadow for a day or two to make sure I'm doing the right thing.
Also, should I request a specific department?

Where I am they don't allow shadowing unless you are a nursing student already affilliated with the hospital, and it is approved by the nursing dept of your school. This is because of confidentiality issues. You can try checking with your school nursing program, it might be different where you are.
You can alway applys at the hospital to be a volunteer, or become a CNA. The CNA skills you would learn would prepare you for your first semester of nursing school.

you should call the hospital in question and speak to someone in the education department/human resources dept and ask about the shadowing policies.
