I plan on searching for a new job after being with my 1st RN job for the past 3 years. My question to all of you is about my resume. Should I include my jobs in healthcare previous to my RN job if I wasn't an RN (I.e. EMT, Paramedic, etc.) or would it be better to just have my only job as an RN listed? Also what resources have you used to build your nursing resume?

I would include all of them because they each add something to your overall picture. I have worked as a nurse for a few years but when applying for new nursing jobs, a lot of the nurse managers I have spoken with about positions and interviewed with loved seeing that I had worked in med/surg psych as a Sr. Psychiatric technician and that I had worked as an EMT for a heavy, high call volume city ambulance. It can make you look very well rounded, I believe. Especially if you're looking to change from your current nursing niche.
