I am a nursing student working on a project for school and I need information from the field on what types of OTC and herbal medications interact with warfarin (Coumadin). I also need info on how nutrition effects warfarin. Appreciate all your information!!! THANKS;)

Just a student here, so I can only tell you what I've got from the books.
Diet
The anticoagulent affects of this drug may be affected by consumption of large amounts of foods high in Vitamin K. These foods are things such as asparagus, beans, broccoli, cabbage, brussel sprouts, cauliflower, collards, green tea, kale, milk, mustard greens, spinach, swiss chard, turnips, and yogurt.
OTC/Herbals
St. John's Wort diminishes it's effect. Increased bleeding risk with concurrent use of anise, arnica, chamomile, clove, dong quai, fenugreek, feverfew, garlic, ginger, ginkgo, panax ginseng, and licorice.
These were all cited from the 10th edition of Davis's Drug Guide for Nurses page 1213. Hope this will help you start your search.
