Crock pot here too, so easy to have a home cooked meal that way. I prep something the night before I work so we have something when I get home. Bonus, I waste no time that night with meal prep!
Another thing I do is make a casserole the night before work, pop it in the fridge and just heat up when I get home.
I do "dump" meals, where you make a sauce, dump the meat in, and then cook. If you take it out of the freezer at night, you can have it thawed and ready to cook when you come home from school the next day. Crockpot can be great, but I get tired of eating shredded meat and this is a nice switch. Check out Fix, Freeze, Feast as a great cookbook for just getting a ton of stuff in the freezer for later. I did it for my post partum weeks and it was teh ossim.
There's a blog called crockpot 365 made by a lady who used her crockpot every day for a year. She posts the different recipes she tries and then reviews them.
What about investing one Saturday into making a big meal that can be portioned into smaller sizes and frozen, but doesn't need to be cooked for an hour? Something like a pot roast. Freeze slices of meat in the juices. Thaw during day. Serve with those quickie microwave steamed veggies.
And hubby can't throw something premade into the oven? I have a lasagna recipe that freezes well. I divide it up into three bread pans (makes a big lasagna and it's just me and the SO) and freeze. Let me know if you'd like the recipe.
Im a fan of eating big salad with green, veggies, cheese, olives for a meal. Pasta with store sauce(heat and eat 10-15 minutes. your hubby can't boil water?) big sandwich night....good bread, premium meats. Grilled cheese and soup. Breakfast for dinner(eggs, pancakes, etc)...the ideas are out there....oh and a crock pot meal once in a while!

I am about to start my second semester, and so far I have had a hard time finding fast dinner ideas for those long days. Basically every day next semester, I walk in the door at dinnertime. I've tried freezing meals, but all those recipes want to be heated in the oven for an hour, yeah right! My husband can't cook, so he's no help. So, any ideas? I'm sure we can all benefit from fast meals!
