I'd say feel free not to disclose your race. Typically, the portion of an application asking you to self-identify race, gender, etc is a requirement from the government so that they can compile information on hiring trends and help determine if there may be discrimination coming into play with candidates selected. I believe that they generally do not allow the people who actually make the decisions on acceptance see this information. Rather, a separate set of workers will use this information to compile the data.
So, if you are uncomfortable disclosing that information, then I don't see how it can hurt to chose to opt out.
