I was going to wait and post this January 1 but the fact is New Years resolutions are meant to be broken and I feel like I have to address some things now. I have recently been inspired by the Man cub who at 19  is not really a cub anymore but he will always be the man cub to me. Over the worst of the Covid quarantines he didn't do much except on-line school, sleep and eat. So when he finally got vaccinated and out and about he found that he had gained 30 pounds (13.6 Kilos). He has been working out, learning about nutrition and exercise and lost 20 pounds in two months. My progress has been slower but I broke 200 pounds today. Several years ago I lost 100 pounds and my body just stalled there. 

More about me: I had been treated for clinical depression for 8 years but finally have my head in a reasonable place. I have fibromyalgia, Inflamatory bowel disease and  NIDDMII. I also suffer from insomnia although that has eased back some lately and I have been a sober alcoholic for over 20 years.

In spite of the train wreck I just described I am always constantly committed to self improvement. I have hobbies for work life balance ad plan to do some traveling as soon as it is safe to do so and yes I have been vaccinated and will be getting my booster next week. 

So what I am planning is to change things up . I have managed my fibro pain with anti inflamatories and  Opioids, but plan to get off the opioids completely this year. Even if I have to deal with pain which never really goes away so be it. I have consulted with my endocrinologist and an integrative medicine specialist to try to get the IBS and Diabetes under better control as I can't tolerate the side effects of metformin. So I am setting out to lose weight exercise more and finally get my weight to a manageable level. 

I work aboout 40 hours a week with some overtime and for work-life balance I enjoy gardening, walking, foraging for wild food, learning new things on Wonderium and binge watching shows from time to time.

So tomorrow I post my physical stats and invite others here to do the same. We can share what type of results we are looking for, track our own and others progress and cheer eachother on.

I sometimes play around with meatless Mondays mostly to amuse myself by the reactions of my carnivorous Husband and son. Would love to know how you do the mushrooms as I did see some beautiful King Oyster Mushroom at a Korean market I frequent.

Yeah for meatless Mondays!

I love oyster mushrooms.  They can be shredded to make a bbq pork style dish, and they can be sliced to look like scallops and cooked like scallops.  

I used this recipe here from his cookbook,  but found it a bit dry so I used added some tomato paste and a little bit of water.  I see in the video he added some sauce before serving which I didn't do and the instructions in the cookbook didn't say to do this.  I like that it's not too sweet like regular bbq sauce can be.  I used chipotle chili powder  and Trader Joes mushroom seasoning which has salt so I didn't add any extra salt.    

I served with brown rice macaroni salad for a whole grain and some air-fried tofu for protein.  It was really good.

I feel humbled in the presence of y'all experienced gourmands. Never had salt problem until my 'silent MI' 12/18.  Now just saying the word aloud affects my CHF status. Shame because I have several gourmet salts prev obt.

Am planning to make a soup - have all the ingredients. Just dump the stuff together. I don't have the stamina/endurance for any cooking. Which makes meals difficult.

I usually need things heartier than soups but today I'm batch cooking some "aush" which is an Afghan noodle soup.  I'll use a whole grain pasta.  I can't find the recipe online that I'm using from one of my cookbooks but it's going to have a lot of chickpeas which I love.  Usually when I make a soup, I will cut back on the broth to make a thick stew like consistency to fill me up and make a meal out of it.

My insomnia kicked in and while I am getting caught up on chores, doesn't look like I can fit in any exercise.  A horrible habit to start.  Keep me motivated.  ?

I belonged to an organic farm years ago and sometimes the share would include kohlrabi and I liked it.  It's good raw and cooked.  Haven't had it in a long time and will have to try again.   I eat roasted beets frequently, roasting them diced in my air fryer.

While I don't have any great numbers to announce, just that I keep trying to be sensible has helped me.

Thanks for the info on the scale, that really isn't a bad price considering what it does.  Might think about it.

My weight has been steady the past few weeks.  Last night in the middle of the night I had some watermelon and cashews.  I can't seem to sleep if I'm hungry but that's not a good habit either.  

I made some really good blackened tofu sandwiches the other day with a peach-tomatillo salsa.   Think Cajun blacked fish but with tofu instead.  I love tofu.  The recipe is from one of my cookbooks and it's not online that I can see.

Going to make a bean salad.  Beans are a staple food that I eat every day.  Good protein source, good fiber, antioxidants, low calorie.  Win.

I know you don't eat meat but you might try a snack such as apples and peanut butter before bedtime. You could be waking due to low blood sugar.

Could be.  My fasting blood sugar tends to be on the high end of normal so I'm not sure that would be it.  I think it's more of a mind thing in that I think eating something might help me sleep.  But I might be crashing and not know it because I was hungry.

I got an hour in the gym today! Did a bit of work on the green house and unpacked my bees.
