Taking student to bathroom
I hope this issue is solved by now. If you still at the school and something like this is asked again ask the principal if she'd rather you take a child to the bathroom (that anyone can do) or take care of sick kids? Inform her if you're dealing with an emergency you cannot leave that child or teacher until EMS gets there or you can lose your license. Ask who will sit in the clinic with the kids there while you do bathroom duties, as they shouldn't be left unsupervised. Taking a child to the bathroom is not skilled nursing care, and that's what they're paying you for.

What do you do when parents scream at you?
Once they start screaming and/or swearing I interrupt and say I'm hanging up until they can talk to me with respect. Then I do it and notify admin. I understand anger but I'm not paid enough to deal with screaming parents.

Help
If she's giving incorrect advice, and you hear it and don't correct it, I would think you'd be liable if the student/parent/teacher takes it and something goes wrong. You can verify this with your district lawyer. I would sit down and have an informal talk with her, with an impartial witness (HR?) and tell her your concerns. If that doesn't work it's time for admin and HR in a more formal setting. She might get mad at you but your license could be at risk.

Personal Cellphone Reliance at School?
If you go to the School Nurses page on fb many advise against using your personal cell for work because if there's a lawsuit brought against you your cellphone can be taken as evidence.
