Does anyone know if it's ok to use textbooks from the previous year before while attending nursing school?

From the previous year which may be the same edition, or a previous edition of the book? While many changes between editions tend to be on the minor side, there will often be a vast difference often in where in the book information is included, plus sometimes major updates do occur. This could make completing reading assignments difficult. If cost is something that concerns you, you can always try buying either used on many bookstore websites (having the ISBN makes finding the exact book much easier) or sites such as Amazon also offer textbook rentals. Can using previous additions be done? Yes, but it can cause difficulties and more work on the part of the student.

Your best bet would be to ask your professor. Sometimes it will work and sometimes you will need the more updated information.

Definitely ask your professor. Rose_queen is right, older versions require a little more work on your part, but half the time you end up buying or renting current versions and only use it a couple times. I notoriously used older versions to save $$$. Most of the time I used the textbook, it was only to supplement lecture slides. If you do go with the older books, you probably won't be able to resale them through your bookstore. Just something to keep in mind.

I used old textbooks throughtout my program. Saved some cash, and there are lots of other sources out there to supplement if need be.

Have you thought about using Amazon or even bookrenter.com?
