I'm a nursing student at the University of Toledo in Ohio. For an assignment I must interview a practicing RN with at least 2 years of experience. I have 13 simple questions to ask and it should take no longer than 20 minutes of your time. I was thinking we could exchange contact info and do the interview over Skype. Have you tried contacting some nurses in your community? Part of the purpose of the assignment is to network within your community, and the contacts you make could prove invaluable once you're on the job hunt. Good luck to you!

Agree with klone. There are a number of resources that are available virtually everywhere: your local public health nurse, your local school nurse, the nurse at the office of your own healthcare provider's office, local hospitals, local nursing homes, etc. Generally, the hidden purposes of these types of assignments include getting you out there talking to people- these connections very well may be the help you need in getting a job- it's often more about who you know than what you know. Take this as an opportunity to network with nursing professionals in your area, not someone from a message board that you won't be able to verify 100% is a nurse.
I have to say, if someone contacted me at work, asking if they could come to my clinic and interview me, I'd be delighted.

I know my nursing supervisors/clinical nurse managers have graciously granted interviews to students (especially if coffee or chocolate were involved )
