I need gift ideas for a clinical instructor. she is in her late 20's, single and I do not know what she does with her free time. The gift has to be under $20 (school rules). I dont know what kind of food she likes except that once i saw her eat ice cream.

Starbucks gift card? Can work for anyone who likes coffee, tea, cookies, etc.

Or a candle and lotion idk maybe something relaxing from her stressful days teaching haha

A gift card to something like a book store is better than a gift of food or hobby-related, etc. Not everyone drinks coffee, wants cookies, burns candles, etc. and such a gift might be wasted unless you know that the person receiving it likes that stuff. (E.g. I am diabetic and don't drink coffee: so Starbucks has nothing for me.)
However ... a teacher should be able to find something of use at a bookstore. Another good generic gift is a gift card at a local shopping mall that is good at any store within the mall. Such a gift gives lots of choices. Similary, a gift card at the hospital gift shop (if she works regularly at the same hospital) can be good.
As for more personal gifts, such as pictures of yourself, etc. I would avoid those unless you have had a truly special relationship with that instructor. Teachers have many students over the years and too many of those types of gifts end up in a box in an attic somewhere -- along with the 15 other knick-knacks that people have given her over the years. Given that most clinical instructors are grossly underpaid, a gift that is actually useful is actually more thoughtful. You can put the nice sentiment in the accompanying card.
