Also, I'm just starting on my prereq.'s, and will also be working full-time. Does anyone have any quick dinner suggestions I could use? It's going to be a long road, and I'm determined not to let anything get in the way(complaining hubby). Thanks a bunch!

Can't help you with the abbreviations, but I do know of several quick fix dinner ideas.

One of our faves is Shake n Bake. Takes less than 5 minites to prepare, pop it in the oven and dinner's ready in 45 minutes. I also fix a box of Betty Crocker Scalloped Potatoes and cook it at the same time as the Shake n Bake chicken, since they require same temp and time to cook. We like it because it's a "real meal", not just frozen pizza!

Also, we buy Tyson's precooked chicken, it's in the frozen food section. They have different varieties, our fave is the Buffalo Strips. I get a huge bag of it at Sam's Club for about $10 (I think). Just heat it in the microwave for about 4 minutes.

I have a million uses for ground beef, so I'll buy a big chunk of it and cook it all at once. Then I freeze it and take out a pound of it whenever I need it. It really speeds up ground beef recipes. Also, I make pot roast in the crock pot and then make 2 pot pies with the leftovers, freeze the potpies and then just pop them in the oven whenever I need to make a quick dinner. It takes less than 10 minutes to assemble the pot pies and the roast cooks itself!!

Valerie, I never thought about cooking the ground beef and freezing it! That is such a great idea. How do you make the pot pies, my kids would love that. I am about sick of eating fast food. Any recipes you have please post. They should have an area for posting recipes :) I have no imagination in the kitchen. Me I am happy eating cereal for dinner, but it doesnt go over well with the rest of the family. Great ideas :)

haha, Janleb I'm with you! Anyways, one really yummy recipe I have that is quick & easy to cook, is soft tacos. Just cut up bonesless chicken into bite size pieces. Put in a pan with enough water to just about cover the chicken pieces & taco mix packet(for ground beef). Simmer approx. 10 min. & it's done!! Warm up tortilla,fill with chicken, and roll up like a burrito! If you have a husband like mine, you might want to have extras cut up ahead of time for fillers (lettuce, cheese, tomatoe, etc.) Side dish of rice and/or can of refried beans & dinners done! We eat a lot of spanish rice, so I just cook a big pot of rice to use as needed for side dishes.

A 2-3 lb shoulder roast feeds me and my hubby one meal and makes two pies. I use pillsbury refrigerated pie crusts (2 crusts in a box)and line the bottom of a disposable pie tin with one, save the other for the top. I tear up the leftover roast into bite size chunks, fix a small bag of frozen mixed veggies on the stove top and then mix the veggies and meat together. Moisten the meat mixture with a little bit of the juice leftover from cooking the roast, enough that it won't dry out, but not enough to make it "soupy". Put half the meat mixture in the pie tin, top with the pie crust and seal. Use the other half for a second pie. Poke about 4 slits in the top of the pie, cover with aluminum foil and freeze. When you're ready to eat, it can be reheated in the oven at about 350 degrees until the crust is browned and the center is warmed through. :)

Get a Taber's Encyclopedic Medical Dictionary. It has all the abbreviations! It used to be small enough to carry with you but I guess it is probably pretty thick by now......(my pharmacology book was 1 1/4 inch thick......my nieces was almost 3".)

Also my kids were 4 and 6 when I was in school, so I got to be an expert at quick meals. ANY man will love smelling cooking onions in a little butter when they come in the door. Now that is NOT intended to be sexist I promise you. OK you have onions, you can add mushroom soup and some canned tuna and peas, serve over noodles, rice....Tuna Casserole. Take the onions, add some ground beef, 1 cup pineapple juice, 3/4 cup ketchup......serve over rice. Ketchup is a wonderful sauce...lots of spices. Bagged salads are great! Pasta Salad take a bag or box of spiral macaroni, cooked...mix with some mayo or salad dressing, cut up some sliced ham, cheese tomato etc.....present a divine salad. A DiGiornos Pizza with some extras....box hidden is awesome...with a little bagged salad! Always set a pretty table and fast food looks like REAL food.

THESE IDEAS SOUND YUMMY! I've never eaten tuna casserole, so I'm excited to try it! From your directions, it sounds as if it's a warm meal. Is it also served cold? For some reason, I think of tuna caserole as a cold dish.
