I've been asked by a CI to write a letter of reference/statement for her. I've never done this before. Anybody has any ideas on what to say?

What's a CI? Clinical instructor?

Assuming that your instructor indicated the purpose of the letter, this would guide the content, i.e. -- is the instructor applying for another teaching position? Applying for admission to an educational program? Volunteer organization?
In other words, if your only association with her/him is as your instructor you can only draw from that experience, but you can focus your comments on his/her traits/strengths that are most relevant to the situation.
