I'm currently applying for a LPN program, one of the requirements is 3 work references, for the past year I have not been working and before that I was a nanny for the same family for a very long time, what should I do, include personal references , I would have no idea how to contact anyone from any jobs before that.

If they require references, do your best to find them. I recall having to use references from totally different lines of work-child care and real estate, in order to have enough references when I first began working in health care.
Sometimes, I used 2 people from same family with different last names. Get creative, but stay honest.
And try to procure references from here on out. I knew I'd need references, so I asked the coaches of my kids teams, who id served as team mom for, parents of children I provided day care to, people I'd worked for casually to help them out, more like colleagues than employers, etcetera.
