There is no way you can stay in the US and work. Retrogression is affecting many nurses and in some areas/states they are even delaying taking on foreign nurses due to the long wait. The only thing you can do is keep asking hospitals, start the process and return home whilst waiting and get a job. If you haven;t got a ITIN number then you can not just apply for one and try to get your Ca license. the ITIN number is specifically for people who are in the US but can not have a SSN like family members of H1b

You are not going to find anyone that is going to be able to sponsor you for a visa to remain in the US and work. The US has been under a retrogression for almost two years, and this means that there are no visas for you to adjust your tourist visa to.
Also, you have been here long enough to be very aware of what is happening in terms of the retrogression and that it has not been possible to adjust a visa for sometime. And things have gotten much worse, not better.
Trying to get the ITIN# for the purpose of getting the license issued to you is going to cause you great problems later on. The requirement for CA is that one has a legal visa to work here and has a SSN#. The ITIN# is not the same as the SSN# and if they wished that the ITIN# be used, then they would have listed that on their application.
Bigger issue for you would be if and ever you got a visa for the US and you are looking at five years plus down the line, how are you going to explain to the BRN that you used the ITIN# to get the license and then have to provide them with a true SSN#? That actually could be grounds to get the license pulled for falsifying information to them.
One also needs to pass the English exams as well as have a Visa Screen Certificate in hand as well. You are trying to take cuts in front of others that have been waiting patiently for a visa as well and this is not looked well upon.
Please have a safe trip home, as there is going to be no way to remain in the US when your visa is up. There are lay-offs happening in CA, as well as hiring freezes, a facility must prove that they were unable to hire an American at this time, and that is going to be hard to do.
