I have had several very promising job interviews... I was just offered (via voicemail) a job today. I'm very excited but I don't know how to proceed as I am kind of holding out for another position... Do I accept the position? Do I tell them that I have other positions that I have applied and interviewed for? I am not sure of the proper protocol. I don't want to quit if I receive another position. I haven't even taken the nclex yet so that's another stressor. Can someone let me know what I should do??

Ask for some time to 'think it over'. That's a great delaying tactic.
FWIW, the job is not officially 'offered' unless they have sent you a written offer letter that contains all of the details. If they are that eager to hire you, you will probably be able to negotiate some schedule flexibility to allow you adequate preparation for NCLEX.
