Yes, extensive is a subjective word. You can begin by describing how many sources were used in order for you to complete a piece; how many arguments were developed and how "extensive" you felt the research to be from your personal experience.

How would you describe the way in which you completed the papers considering that there are no classes? How did you obtain the information needed for the assignments? Was it based on personal experience? Are the assignments opinion pieces or research papers? Was the research extensive?
