I was wondering, I will be finished with my Prereqs next Summer, and if I was to get accepted into the nursing program starting in the fall would I be able to finish my two general classes at the very end of the program? Like I finish my program, but take the two remaining classes the following semester and then graduate? Please comment!

It all depends on your program's requirements. At my school you must be finished with your prerequisites (except for nutrition and your 2 humanities courses, nutrition must be completed by your first term of nursing school and the humanities whenever you can schedule them) or currently have the last of your prerequisites in progress in order to apply. My school also has application cycles. There are only two periods a year in which you can apply to the program. Spring for Fall start, and Summer for Winter/Spring start.
I was personally advised to complete all my prerequisites and support classes to help sweeten my application (the more courses you have completed, the more points you have on your application) and to ease my work load while in the nursing program Check with an academic advisor at your school, they're one of your best resources. :)
