Discharge planning? I always think that sounds kind of fun.
Manager, although our managers work a shift a week to keep up their skills and to be part of the team. That's cool.
What about teaching? Lamaze et al. classes; you'd be working with people, but not in a "sick" environment. Diabetes education, maybe.

Paper work is unfortunately how most nurses spend the majority of their time. I would look into working at an insurance companies, most medical insurance companies use nurses to help them review claims. Legal nursing also an option. Unfortunately most of these jobs require clinical experience, at least a few years
