Pick something you are interested in and know a little about, do a fair amount of research (the internet is wonderful for this, as I frequently utilize internet research to present educational offerings), and then become the subject matter expert by familiarizing yourself with the information until you know it by heart.

You can always do Cordarone. Very interesting and alot of little fact RN's forget- or never learned about the drug.
