You can certainly include shadowing experience on your resume; some folks have a "Professional Development" section you could list it in.
I wouldn't go into detail on your resume for that would take up valuable space. We do offer a free Shadowing Experience Documentation Form you can submit with your application (some programs also provide their own so check their website).
