I'm currently a chair for our shared Governance, I want it to be informative as well as productive to make good changes for the unit. Does anyone have experience with this or what would be most helpful to be proactive?

Everyone's SG committees will be different as they should be tailored to your unit/specialty. I was on the DH committee at my previous job and will most likely be on the committee at my new job once I hit the year mark per my unit manager.
Best advice is to listen to your coworkers. If everyone is always complaining about one policy/task then that is your committees new project, take the policy and change it or educate the unit on why it is the way it is.
