I'm in the first semester of the nursing program at my college. I think my hardest class this semester besides Pharmacology, is Health Assessment. I'm worried that I'm not doing my assignments in the way my professor wants. One of the assignments that I'm working on right now is writing a health history for a 65 or older patient of my choice who is willing to answer my questions. I haven't started it yet because I'm not sure where to actually start. If anyone has written a health history before, do you have any tips on what to write and not to write?

Do a Google search. You'll come up with all kinds of ideas. Put them all together, and go from there. :)

I have written one before and my book was a really great guide. Does your book have an example? Otherwise try googling health history assessment or something.
