RN- Probationary license vs Court hearing

Hello!

I am a nurse from NJ that got a DUI in 2015. Applying for endorsement in California was denied, despite completing a recovery program and having various reference letters to attest to rehabilitation. I appealed the decision and was offered probation for 3 years for the stipulated agreement, or I can roll the dice and go to court, and more than likely end up with probation. Does anyone have experience with this? Are there any suggestions for negotiating the terms of probation or suggestions for going through with the hearing? All input will be very appreciated. This has been a long journey!

I am not sure the terms can be negotiated but I am not familiar with California.
