<p>
	Going back to work next week so I find myself meal prepping again. I'm trying to make things easier for my husband as he has some trouble fending for himself. Please understand that he is a HFASD (High Functioning Austism Spectrum D/O) and really smart but it's hard for him to stick to any kind of healthy eating plan so I'm prepping a few things for him as well and see how that goes. 
</p>

<p>
	I blend most of my own spices to keep the salt down and eliminate unneeded additives. I seasoned six chicken half breasts (Two Mexican Chili/Citrus, Two Persian, and two Greek Island Summer) I'll throw them on the BBQ later and stir up some barlotto and asparagus for dinner, then portion out the rest with assorted veggies and low impact carbs for the rest of the week.  I am also going to do some egg dishes and pasta just to round things out. 
</p>

	I feel like I'm kind of killing it today.

<p>
	So I made an Apple-Cranberry pie for our family feast yesterday. My husband asked why I didn't make pie at home. The truth is we are both diabetic and don't need a lot of sweets.
</p>

<p>
	The only issue with having Thanksgiving away from home is no yummy left overs. So today I am making an Apple pie since the cranberries were a bit more tart than I like. I reduced the amount of sugar by half and seasoned it with McCormick Apple pie spice, some corn starch an lemon juice. Into the new Air Fry Oven at 350 for 30 minutes. later I will do oven fried potatos and Orange pecan green beans. We will not feast like this again until Christmas. 
</p>

<p>
	I have to say I'm loving this Air Fry Oven I got on an early Black Friday sale. Even when I get my big oven fixed I might not use it so much. It bakes, broils, air fries, dehydrates and more. 
</p>

	So in the wake of our bereavement my sone said he wanted to learne how to make Fettuchini alfredo from scratch. I am going to try to lighten it up a bit by using half and half instead of heavy cream. I made fresh pasta dough and will teach him how to roll it out later.
</p>

	I am also making fresh home made bread and an heirloom tomato relish. I hope to post some pictures later today. 
</p>

	So Thursday is my day off and since I was on iso last week with Covid I got my hair done today. Then I went to the store and got ingredients to make one of my favorite dishes. I usually do pasta but since mt body building son is cutting weight right now I made chicken thighs stewed with green chili, onions and citrus. Added black beans as a side dish and served with fresh salsa and 0 carb tortillas.

	Spent the day breaking down the one big pumpkin I rescued from the garden. I should get enough puree to do sveral pies, soup and maybe a pumpkin facial! The pumpkin featured is stock art but this type of pumpkin along with sugar pumpkins are my favorite for cooking.
