Healthier Living Support Thread: PART TWO!

Nurses Stress 101

Published

Ok folks, time has come to Start anew.......over 1000 posts means LOTS of bandwidth use here at allnurses.com. So I have been asked to remedy the situation.....

Anyhow, I have enjoyed so much your sharing, help and support here on the Healthier Living Thread....let's keep it up!!!!!:)

QOD: What is your favorite "old" or "new" healthy food/recipe? Care to share?

I have "rediscovered" oatmeal. Yep old fashioned good ole Quaker Oats-----the slow cooked kind.....with raisins, a bit of cinnamon and some Splenda.....YUMMY. Eating this as my dh's cholesterol and lipid counts were very high---trying to clean up my own dietary practices to help him with his....anyhow.....

Anyone else? As you change/grow/develop new tastes, what are your "old" or "new" healthier-choice favorites??? Care to share????

On the menu tonight for dinner is............baked flounder with tossed green salad, green beans and a baked potatoe :)

Now you're talkin' my kind of good eatin' Jess. How about setting up a place for me at the table. I'll be right over. :rotfl:

Hi Chelly! I might have missed it, but what is "Seatlle Sutton"???

Take a block to extra firm tofu and cut it into slices. Wrap in paper towels, and then wrap in a dish towel. Put wrapped tofu on a plate and stack a bunch of plates on top of this. This will squeeze out the water. Then slice and dice red peppers, onions, garlic, broccolli, carrots, whatever and get a nice teriyaki sauce or other stir fry sauce. By now the tofu is drained and can absorb the sauces. I use peanut oil or canola oil. I made some yesterday. Don't forget to add the hot chilis.

Just wanted to give a "Tofu Lesson". Woot!

Here is my recipe for Marinara Sauce. You will LOVE it; can be made vegetarian or with meatballs (I have a great recipe for those too) or Italian Sausage, also clams are GREAT in this sauce too!!! It works best if you can SLOW-cook it all day long, believe me. Your house will smell DREAMY ---can be frozen well, for later use. I make a ton and freeze it.

1 1/2 C Extra virgin olive oil

1 C garlic

2 pounds onions

1 C celery

1 lb carrots (I use less, more like 1/4 lb)

1 1/2 C pepper ( I like to use orange, green and yellow ones for color)

1 lb mushrooms

2 1/2 lb tomatoes (roma or vine-ripened best)

2 C red wine

2 tablespoons oregano

2 tablespoons basil

2 tablespoons hot pepper flakes

I like to saute the onions, celery, peppers and mushrooms in enough olive oil to cover the bottom of my stock pot, first. THEN I chop and add all ingredients in the pot, bring to boil and then simmer for at least 6-8 hours. It looks really chunky at first, but as tomatoes boil down, you will be left with a really good thick and spicy marinara sauce you can use for any pasta dish or even in lasagna. Bon Appetit!

I like to serve it over the newer low-carb wheat pastas.

Got QOD for us today Deb? :)

QOD:

When you feel like quitting (whatever tough quest you are on, like being healthier), what keeps you going? Any special thoughts/meditations/motivations you use to keep yourself on-course?

Selfish motivations....I need to hear this today, from whoever has some ideas. I am in a rough patch. Thanks!

For women: I think that we are always putting ourselves last. We are natural nurturers and I bet that being a mother and a nurse is even more so.

Anyhow, I believe that being "selfish" for a day is wonderful. If she is married/together with someone she should plan that special day and either have the kids babysat by a sitter or the spouse. Maybe save a few bucks and go get pampered at a spa or atleast the nearest salon. :)

Go out to the mall with a friend or even alone, and "splurge" on any one outfit or item you've been wanting. Take the day off from the kitchen, chores and the children.

I am sure the person becomes rejuvenated and comes back to "work" renewed in some sense.

I am not a mother or nurse, but DO take a few of these "days-off" a year. I get tired/bored of chores, cooking and thankfully my husband is very supportive of me.

For a guy, the same thing can be done omitting the a few things. Maybe hanging out (even at home) with a few buddies, eating and having time alone with them.

Be creative and selfish.

:)
