Happy belated July 4th! Okay, hi, all! I have a small question; how can you split half a pie between six people? The pie is the size of those already made crusts you see in stores. My boss just got on me for how big I cut the pieces of the sugar free banana cream pie I made for the residents tonight. I thought I was cutting it normal sized, I mean they weren't honking gianourmous by any means but she says that they should be slivers and not slices and that there should still be half a pie left after all six have a piece. I don't know. Maybe I just need to work more cutting teeny-tiny pieces. How big or small of dessert slices, cake or pie, do you cut and serve your residents if you are in charge of the cooking at your facility? I know that too large of portions are bad but I thought it would be nice for them to at least get to taste and savor the dessert instead of having it gone in a bite or two. I know when I'm in my eighties or nineties with nothing to look forward to but my next meal I'm going to want to enjoy my desserts, too! Within reason of course! I don't want to wind up like Gilbert Grape's mom! Poor lady!

I used to work in the kitchen of a nursing home as a cook/baker. For those on diabetic diets, a standard 9-inch pie was cut into 12 slices. For regular diets the same pie would be cut into 8. Best bet would be to check with the dietician if you have one. Also keep in mind what you made for them is in addition to the already approved and measured diet.

We don't have a dietician or special diets for anyone other than no sugar for our one diabetic. I think the owner is just concerned about the cost of feeding them.
