How picky can rural nurses be in choosing which state to work? I like the Southwest.

I would prefer to work in a rural part of Arizona or New Mexico particularly a farming community one day (still got alot of nursing school to go). I am willing to work wherever I am needed, but I'm sure I am not the only person to have a preference as to which state they would like to live/work.
As far as rural nursing is concerned how much choice do rural nurses have when deciding which state and type of rural comunity they wish to work?
Perhaps this question is too specific, but: How much demand is there for rural nurses in Arizona/New Mexico farming communities, not just today, but long term?
