Ideas For Summer Education

Moral is down and my facility and I want to plan something fun yet educational for our employees. I thought we could do maybe something outside with a "carnival theme" but maybe have games or activities that relate to education... Any ideas? Anything else that would be summer related or outdoors that you have done?
